Sausage Stuffed Peppers

1/2 pound of Bacon****

1 pound of favorite sausage (i used Mango Habanero bratwurst)**

1/4-1/2 lb of shredded cheese ****

softened cream cheese

1 sweet onion

2 good quality tomatoes diced  (or rotel)

5-6 peppers of your choice (i used Anaheim)

Slice and saute the onions in butter until translucent. Take the sausage out of the casing.  (Just split from end to end and turn inside out.  It will all pop out!) Add meat to the pan and sautee until brown. While that is cooking, split the pepper open from end to end and remove seeds.  Stuff pepper with softened cream cheese.  pour spoonfuls of your sausage mixture over the cream cheese until the pepper is nearly heaping.  Sprinkle with shredded cheddar and diced tomatoes.  Stuff it all in as tight as you can with a spoon.  Wrap your raw bacon around the peppers and use 2 slices of bacon if needed.  You may use a toothpick to hold together if desired.  Grill on medium until bacon is done and crispy and the inside of the pepper is soft and gooey.

This pepper will yield and sweet and spicy meal.  If you prefer mild, try another brat flavor such as Traditional, Whiskey Peppercorn, Apple, or Swiss.
